Baked Apple Fritters Recipe

Ingredients
  

For the Fritters
  • 250 g plain flour
  • 75 g caster sugar
  • 2 tsp baking powder
  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ½ tsp salt
  • 1 large free-range egg
  • 120 ml whole milk
  • 60 g unsalted butter melted and cooled
  • 1 tsp vanilla extract
  • 2 medium baking apples approx. 300g, peeled, cored and chopped
For the Vanilla Glaze
  • 150 g icing sugar sifted
  • 2-3 tbsp whole milk
  • ½ tsp vanilla extract

Method
 

  1. Preheat and Prepare: First things first, preheat your oven to 200°C (180°C fan). Line a large baking sheet with baking parchment to prevent any sticking.
  2. Combine Dry Ingredients: In a large mixing bowl, whisk together the plain flour, caster sugar, baking powder, cinnamon, nutmeg, and salt. Mixing them now ensures the spices are evenly distributed.
  3. Mix Wet Ingredients: In a separate, smaller bowl or a jug, whisk the egg, milk, cooled melted butter, and vanilla extract until they are well combined.
  4. Create the Batter: Pour the wet ingredients into the bowl with the dry ingredients. Use a spatula to mix until just combined. Be careful not to overmix; a few lumps are perfectly fine.
  5. Fold in the Apples: Gently fold your prepared diced and grated apples into the batter until they are evenly incorporated.
  6. Rest the Batter: Let the batter sit for 5 minutes. What works best for me is using this time to clear away the mixing bowls. This short rest allows the baking powder to activate, resulting in a fluffier fritter.
  7. Scoop and Bake: Using two spoons or a medium ice cream scoop, drop rounded tablespoonfuls of the batter onto your prepared baking sheet, leaving about 5cm of space between each one for them to spread. You should get about 12 fritters.
  8. Bake to Perfection: Bake for 12-15 minutes, or until the fritters are puffed up, golden brown around the edges, and a skewer inserted into the centre comes out clean.
  9. Cool Slightly: Transfer the baking sheet to a wire rack and let the fritters cool for about 5-10 minutes. They need to be warm, but not piping hot, for the glaze.
  10. Prepare and Apply the Glaze: While the fritters are cooling, whisk the sifted icing sugar, 2 tablespoons of milk, and vanilla extract in a small bowl until smooth. If it's too thick, add the remaining milk, a little at a time. Drizzle the glaze generously over the warm fritters. Let it set for a few minutes before serving.

Notes

Store leftover fritters in an airtight container at room temperature for up to 2 days. Gently reheat in the oven or microwave before serving.
