  • 400 g cooked chicken breast shredded
  • 250 g cream cheese softened
  • 120 ml buffalo hot sauce such as Frank's RedHot Original
  • 60 ml mayonnaise
  • 120 g mature cheddar cheese grated
  • 120 g mozzarella cheese grated
  • 60 ml full-fat milk
  • 1 small red onion finely chopped (optional, for garnish)
  • 2 tablespoons fresh chives chopped (optional, for garnish)
  • A pinch of garlic powder
  • A pinch of onion powder
  • Freshly ground black pepper to taste

Method
 

  1. Preheat and Prepare: Begin by preheating your oven to 180°C (160°C fan/Gas Mark 4). Lightly grease a medium-sized oven-safe dish, about 20x20cm, with a little oil or butter. This ensures your Buffalo Chicken Dip doesn't stick and comes out easily.
  2. Combine Wet Ingredients: In a large mixing bowl, combine the softened cream cheese, buffalo hot sauce, mayonnaise, and milk. Mix thoroughly with a wooden spoon or spatula until the mixture is completely smooth and creamy, with no lumps of cream cheese visible. The mixture should have a vibrant orange hue and a lovely thick, spreadable consistency.
  3. Add Chicken and Seasonings: Stir in the shredded cooked chicken, garlic powder, onion powder, and a generous grind of black pepper into the creamy mixture. Fold everything together until the chicken is evenly coated and every strand is glistening with the sauce. You should notice a delightful aroma of buffalo sauce beginning to fill your kitchen.
  4. Layer the Cheeses: Add half of the grated mature cheddar cheese and half of the grated mozzarella cheese to the chicken mixture. Stir gently until just combined. This ensures cheese is distributed throughout the dip, not just on top.
  5. Assemble and Bake: Pour the entire mixture into your prepared oven-safe dish, spreading it out evenly. Sprinkle the remaining cheddar and mozzarella cheese generously over the top. The surface should be completely covered with a delightful blanket of white and yellow cheese, ready to melt into golden perfection.
  6. Bake to Golden Perfection: Place the dish into the preheated oven and bake for 20-25 minutes. Keep an eye on it! The Buffalo Chicken Dip is ready when the cheese on top is beautifully melted, bubbly, and has turned a gorgeous golden-brown colour, and the dip around the edges is gently simmering. You'll hear a soft bubbling sound and smell the inviting aroma of warm cheese and spicy chicken.
  7. Rest and Garnish: Once baked, carefully remove the dish from the oven. Let the dip rest for 5-10 minutes. This resting period allows the dip to set slightly, making it easier to scoop and ensuring it's not too hot to enjoy immediately. If using, sprinkle with finely chopped red onion and fresh chives for a pop of colour and freshness. Serve warm and enjoy!

Notes

Serve warm with tortilla chips, celery sticks, carrot sticks, or crackers. For an extra kick, add a dash of cayenne pepper. Can be prepared ahead and baked just before serving.
