Ingredients
  

  • 500 g beef mince 15-20% fat content for best flavour
  • 1 teaspoon sea salt
  • ½ teaspoon black pepper freshly ground
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon Worcestershire sauce
  • 8 slider buns brioche-style or potato rolls work beautifully
  • 4 slices of cheddar cheese cut into quarters
  • 4 small gherkins sliced lengthways into thin strips
  • 1 small red onion thinly sliced into rings
  • Butter lettuce leaves washed and dried

Method
 

  1. Prepare the special sauce: In a small bowl, combine the mayonnaise, tomato ketchup, Dijon mustard, white wine vinegar, smoked paprika, and cayenne pepper. Whisk until the mixture turns a uniform pale coral colour and smells tangy and slightly smoky. Cover and set aside in the fridge to allow the flavours to meld while you prepare the patties.
  2. Form the slider patties: Place the beef mince in a large mixing bowl. Add the sea salt, black pepper, garlic powder, onion powder, and Worcestershire sauce. Using your hands, gently combine the ingredients until just incorporated — you should see the seasonings evenly distributed throughout the meat, but avoid overworking it or the texture will become dense. Divide the mixture into 8 equal portions, each about the size of a golf ball, and shape them into thin patties roughly 8cm in diameter. Press a small indent in the centre of each patty with your thumb; this helps them cook flat rather than puffing up into domes.
  3. Sear the patties to perfection: Heat a large frying pan or skillet over medium-high heat for 2 minutes until a drop of water sizzles and evaporates immediately. Place 4 patties into the pan, leaving space between each one — you should hear a loud sizzle as they hit the surface. Cook for 3 minutes without moving them; the edges will turn a deep brown and a rich, savoury aroma will fill your kitchen. Flip each patty using a thin spatula, and you'll see a beautifully caramelised crust on the cooked side. Add a quarter-slice of cheddar onto each patty, then cover the pan with a lid for 1 minute until the cheese melts into a glossy, golden layer. Transfer the patties to a plate and repeat with the remaining 4 patties.
  4. Toast the slider buns: Split each slider bun in half. Place them cut-side down in the same pan (still hot with the rendered beef fat) for 45-60 seconds. The buns will absorb the savoury residue and turn a warm golden brown with visible toasted marks. You'll smell a nutty, buttery aroma as they toast. Remove and arrange on a serving board.
  5. Assemble with intention: On each bottom bun half, place a small butter lettuce leaf that's been folded to fit the bun size. Top with a cheesy beef patty, ensuring the melted cheese faces upward. Add 2-3 thin gherkin strips arranged neatly in a single line, then 2-3 red onion rings scattered on top. Spoon approximately 1 heaped teaspoon of the special sauce onto the top bun half and spread it evenly to the edges.
  6. Finish and serve: Gently press the top bun onto each slider, sauce-side down, and secure with a cocktail stick pushed through the centre for stability. Arrange the sliders on a wooden board or slate platter with small gaps between each one. The contrast of the golden bun, deep brown beef, bright red onion, and pale sauce creates a visually striking presentation. Serve immediately while the patties are still warm and the buns retain their slight crunch.

Notes

For best results, use beef mince with 15-20% fat. Do not overwork the meat when forming patties. The special sauce can be made ahead and refrigerated.
