Ingredients
  

  • 600 g boneless skinless chicken thighs
  • 3 tablespoons chipotle paste from a tin or jar
  • 2 tablespoons olive oil
  • Juice of 2 limes
  • 4 cloves garlic finely minced
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 300 g long-grain white rice
  • 500 ml chicken stock
  • 1 bay leaf
  • 1 tablespoon unsalted butter
For the bowl: 1 tin black beans (400g), drained and rinsed; 150g sweetcorn; 2 ripe avocados; 150ml soured cream; fresh coriander; lime wedges

Method
 

  1. Marinate the chicken. In a medium bowl, whisk together the chipotle paste, olive oil, lime juice, minced garlic, oregano, cumin, smoked paprika, and salt until it forms a thick, brick-red paste. Add the chicken thighs and turn them with your hands until every surface is coated. The smell at this stage is already intoxicating — smoky, sharp, and earthy. Cover the bowl and leave it in the fridge for at least 30 minutes, or up to 4 hours for a deeper flavour.
  2. Start the rice. Rinse the rice under cold water until the water runs clear — this removes excess starch so the grains stay separate. In a saucepan, melt the butter over a medium heat until it smells nutty and begins to foam. Add the rice and stir for two minutes until the grains look translucent at the edges and you hear a soft crackling sound. Pour in the chicken stock, drop in the bay leaf, and bring to a boil. Reduce the heat to low, cover tightly, and let it simmer for 18 minutes without lifting the lid. When done, the rice will look fluffy and the stock will be fully absorbed. Fluff with a fork and discard the bay leaf.
  3. Cook the chicken. Heat a large frying pan or skillet over a high flame until a drop of water sizzles and evaporates instantly. Place the marinated chicken thighs in the pan in a single layer — you should hear a loud, aggressive sizzle. Cook for 5–6 minutes without moving them. The underside will turn a deep, charred mahogany with blackened spots. Flip each thigh using tongs; the cooked side should feel firm and release easily from the pan. Cook for another 5 minutes. The chicken is ready when the internal temperature reaches 74°C and the juices run clear.
  4. Rest and slice the chicken. Transfer the chicken to a cutting board and let it rest for 5 minutes. This step is non-negotiable: the juices need time to redistribute, otherwise they'll pool on the board and leave the meat dry. When you slice into the chicken, you'll see it's juicy and tender, with a dark, smoky crust. Cut each thigh into thick strips against the grain.
  5. Prepare the bowl components. While the chicken rests, warm the black beans and sweetcorn in a small pan over a low heat. Halve the avocados, remove the stones, and slice the flesh into neat fans. Chop a handful of fresh coriander. Set everything out in small bowls so you can build each serving individually.
  6. Assemble the bowls. Divide the fluffy rice among four bowls. Arrange the sliced chicken on one side, then add a generous spoonful of black beans and sweetcorn. Fan the avocado slices alongside, add a dollop of soured cream, and scatter fresh coriander over the top. Finish with a squeeze of lime juice — the bright acidity cuts through the richness. The final bowl should look like a mosaic: warm whites, deep browns, bright greens, and creamy yellows.

Notes

Marinate the chicken for at least 30 minutes, but up to 4 hours for deeper flavor. Resting the chicken after cooking is essential for juiciness.
