Ingredients
  

  • 8 large free-range eggs
  • 400 g beef sausages good quality, high meat content
  • 2 tablespoons unsalted butter
  • 60 ml whole milk
  • 100 g mature cheddar cheese grated
  • 1 large ripe avocado sliced
  • 4 large flour tortillas approx. 25cm diameter
  • 1 small red onion finely diced
  • 2 tablespoons tomato salsa shop-bought or homemade
  • 1 teaspoon smoked paprika
  • ½ teaspoon ground cumin
  • Salt and freshly ground black pepper
  • Handful of fresh coriander roughly chopped
  • 1 tablespoon olive oil
  • 2 spring onions sliced (for garnish)

Method
 

  1. Prepare the sausage filling. Remove the sausage meat from the casings by running a sharp knife down the length of each sausage and peeling the skin away. Heat the olive oil in a large frying pan over a medium-high flame. Add the sausage meat, breaking it up with a wooden spoon. Cook for 6–8 minutes, stirring occasionally, until the meat is deeply browned and the edges are crisp and dark. You should hear a steady, gentle sizzle, and the kitchen will fill with a rich, spiced aroma.
  2. Build the flavour base. Lower the heat to medium. Add the diced red onion to the pan with the cooked sausage. Stir and cook for 3 minutes until the onion turns translucent and softens. Sprinkle in the smoked paprika and ground cumin, stirring constantly for 30 seconds until the spices bloom and release their fragrance — it should smell warm and slightly smoky. Transfer the entire mixture to a bowl and wipe the pan clean with a kitchen towel.
  3. Create the silkiest scrambled eggs. Return the pan to a low heat and add the butter. While it melts, crack the eggs into a bowl, add the milk, and whisk vigorously until the mixture is pale yellow, frothy, and completely uniform — no streaks of white remaining. Pour the eggs into the melted butter. Using a silicone spatula, gently push the eggs from the edges toward the centre every 20 seconds. Do not stir constantly. You want large, soft, billowy curds to form. Cook for 4–5 minutes. The eggs should look glossy and slightly underdone in the pan — they will continue to cook from residual heat. Remove the pan from the heat immediately when they are just set but still look moist.
  4. Warm the tortillas. Stack the tortillas on a plate and cover them with a slightly damp tea towel. Microwave them for 30 seconds. Alternatively, heat each tortilla in a dry frying pan over a medium heat for 15 seconds per side — you want them pliable and warm, with tiny brown spots appearing on the surface, but not stiff or brittle.
  5. Assemble the burritos. Lay a warm tortilla flat on a clean work surface. Spoon a quarter of the scrambled eggs down the centre, leaving a 5cm border at the top and bottom. Add a quarter of the sausage mixture on top of the eggs. Sprinkle over a generous pinch of grated cheddar, followed by slices of avocado, a spoonful of salsa, and a scattering of fresh coriander.
  6. Fold and seal. Fold the left and right sides of the tortilla inward over the filling. Then fold the bottom edge up and over the filling, tucking it tightly. Roll the burrito away from you, keeping the sides tucked in, until you have a neat, tight cylinder. The tortilla should feel snug but not splitting.
  7. The golden finish (do not skip this). Return the pan to a medium heat. Place the burritos seam-side down in the dry pan (you may need to do this in batches). Cook for 2 minutes until the bottom is golden brown and crisp. Carefully flip and cook the other side for another 2 minutes. The exterior should crackle slightly when you press it, and the cheese inside will be fully melted and oozing.

Notes

For best results, use high-meat-content sausages and do not skip the final pan-toasting step to achieve a crisp exterior.
